So easy. So good.

For convenience and for a healthy change up on a family pizza night, everyone needs this wholemeal wraps pizza recipe. Nutritionally loaded tomato base, it feels so naughty but not!

 Yield: 1

What You Need:
  • 1 whole wheat wrap (or whole wheat pita bread)
  • 1/4 cup sauce marinara tomato sauce - or check out my nutrient loaded 5 minute homemade option below.
  • 1/4 cup or less shredded/crumbled cheese (mozzarella, cheddar, goat, feta)
  • Toppings go wild! - I used red onion, yellow capsicum, cherry tomatoes, and finished off with some fresh rocket.

5-MINUTE NO-COOK FRESH TOMATO PIZZA SAUCE ~ It’s delicious!
With just a handful of ingredients and a whir (or stir), you’ll have fresh homemade pizza sauce on hand. To make it super easy and super fast, a high-powered blender is your best bet.
  • 3-4 medium tomatoes quartered
  • 1 (6-ounce) can tomato paste, check for no added sugar.
  • 2 tbsp olive oil
  • 2 tsp fresh thyme leaves
  • 1 tsp raw honey
  • 2 medium cloves garlic peeled and chopped
  • Dash of sea salt, plus more to taste
  • Few turns fresh ground pepper
  • 2-3 tbsp chopped fresh basil (optional)
  • I also added a cup of fresh spinach leaves for an extra kick.
Just throw all your ingredients into the pitcher of the blender and puree. Or, if you don’t have a blender, it’s still totally doable – just mince the garlic and chop your tomatoes as fine as you like and then mix in a bowl.*

What to Do:
  1. Preheat the oven to 180 degreesC.
  2. Place the wrap on baking tray with grease proof paper. Place in oven for 5 minutes or until crisped slightly.
  3. Remove from oven, flip over and spread sauce evenly across the tortilla, leaving ½ inch around the edges. Sprinkle with cheese and toppings.
  4. Bake until the cheese is golden and bubbling (no sooner!) and the edges of the wrap are lightly browned, about 10 to 12 minutes. Let the pizza cool for a few minutes before slicing. Add rocket if a desired topping.
Enjoy!
