Waldorf salad ala Jamie Oliver

Spring is in the air, the sun was warm on my back whilst busy cleaning and hanging washing, motherhood joys! And out of it all it got me wanting for a new fun salad.

Fancy to look at but Oh so SIMPLE, this beauty was every thing I fancied!! Roasted grapes, roasted walnuts and delicious dressing!

​Plates filled, loads left over for perfect meal planning or 'left overs Friday'! 😉 Win

Serves 4


What You Need:
  • a bunch of red and white grapes 
  • olive oil
  • sea salt and ground pepper
  • 1 lemon
  • 1/2 cup raw walnuts
  • 1/2 fresh celery 
  • 2 cos lettuces 
  • 1 small apple
Dressing:
  • 2 tbsp olive oil
  • 4 tbsp unsweetened Greek yoghurt
  • 1 tsp English mustard
  • 1/2 lemon fresh juice 
  • 1 tbsp tarragon 
  • sea salt and ground pepper to taste 




What to Do:
  1. Preheat oven to 180C. Place grapes on baking tray and drizzle with olive oil, sprinkle of salt and pepper. A squeeze of fresh lemon juice from half a lemon. Place in oven to roast for 5-10 minutes.
  2. Remove from oven and place nuts on tray, place back in oven for another 5-10 minutes
  3. In the meantime, chop celery and cos lettuce in thin, fine strips. Place in a medium size bowl.
  4. Remove grapes and walnuts from oven. Cool slightly. 
To make dressing:
  1. Add, olive oil, yoghurt, mustard, lemon juice and tarragon, mix until combined. Season with sea salt and pepper to taste. Mix through the lettuce and celery.
  2. Slice apple into thin sticks and mix through salad.
  3. Pick grapes off and place in salad. Crush nuts over top. (Leave abit back for decoration if required) drizzle sauce from roasting tray over salad. 
  4. Enjoy with roast chicken or as it is for light lunch.
