Tomato and fresh mozzarella salad with warm red onion dressing

Looking for a light lunch, healthy and super simple, that will make you feel as if you’re dining in your favourite restaurant. This is all I love in lunch! 


Sweet onions and balsamic are like heaven drizzled all over. Be Impressed with this simple beauty.

What You Need:
Main ingredients
  • 6 ripe tomatoes
  • 1 punnet yellow cherry tomatoes, halved (optional)
  • 3 balls fresh mozzarella
  • 30 grams basil leaves
  • 1 red onion, finely sliced
  • 100 grams rocket, watercress and mizuna salad
Dressing
  • 80ml olive oil, plus extra for rubbing
  • 1 red onion, finely chopped
  • 60ml balsamic vinegar
  • 1 tsp dijon mustard
  • 1 pinch sea salt
Suggestions for serving
  • wholemeal loaf 


What to Do:
  1. Thickly slice tomatoes and mozzarella. Layer with basil and onion on 6 serving plates. Scatter over rocket.
  2. Heat olive oil in a small saucepan and cook onion until dark brown and caramelised. Cool slightly, then whisk through balsamic vinegar, mustard and seasoning.
  3. Rub bread with olive oil and char-grill until golden and crispy. (optional)
  4. Serve salad drizzled with warm dressing and wholemeal toasts.
