Taco Stuffed avocados

The perfect low carb Taco! Can I get an amen for that.

These avocados are so incredibly easy and loaded up with the BEST flavour. No compromises on taste and feel good factor! Perfect for an easy lunch or light dinner. You wont regret it!

​A whole lot of healthy yum.




Yields 6 halves


What you Need:
  • 500g minced beef (free range if possible)
  • 1 tsp chilli flakes
  • ½ tsp sea salt 
  • ½ tsp ground cumin
  • ½ tsp dried oregano
  • ¼ tsp garlic powder
  • 70g tomato paste or to preference 
  • 3 avocados halved
  • 3/4 cup shredded cheddar cheese
  • ¼ cup cherry tomatoes sliced
  • ¼ cup lettuce shredded
Additional toppings:
  • fresh coriander
  • sour cream


What to Do:
  1. Add mince to a medium size sauce pan. Cook over medium heat until browned.
  2. Drain the grease any excess fat and add the seasonings and the tomato sauce. Stir to combine. Cook for about 3-4 minutes.
  3. Remove the pit from the halved avocados. Load the crater left from the pit with the coked mince. Top with cheese, tomatoes, lettuce, coriander and sour cream.
  4. If you want to make a larger area in the avocado for the toppings, spoon out some of the avocado and set aside to make guacamole! Then fill with toppings.
