Spring mixed fruit and roasted nut salad

With spring spung, and the warm sunshine creeping in, the BBQ was dusted off and made its first outing for the season! Roll on those Summer nights, splashing in the pool and food that tastes so good!’ 


This spring salad was a perfect way to kick things off! Roasted almond and pistachios, yes please! So easy, and SO ridiculously tasty! Yay for post bbq lunches!! 💛

Serves 1 large salad

What You Need:
  • 400g pack of mixed baby spring greens (spinach, arugula, lettuces, chard, radicchio)
  • 225g strawberries, cored and sliced thin
  • 1 ripe mango, peeled and sliced
  • 1/4 cup sliced almonds, lightly roasted 
  • 1/4 cup sliced pistachios, lightly roasted 
  • 1 avocado, peeled and sliced
  • 1/2 cup feta, crumbled
Dressing:
  • 3 tbsp balsamic vinegar
  • 1/2 cup extra virgin olive oil
  • 1/2 tsp dijon mustard
  • dash of sea salt and pepper

What to Do:
  1. In a large mixing bowl, toss mixed greens, strawberries and mango together. Set aside.
  2. Make the dressing: In a small mixing bowl, add olive oil, balsamic vinegar, mustard, salt and pepper and whisk vigorously until completely combined.
  3. Pour about half of the dressing over the salad mixture and toss to combine.
  4. Lay sliced avocado and sprinkle almonds, pistachios and feta on top and drizzle with the rest of the dressing. Serve immediately.
