Salmon superfood salad

This all in one salad surpassed my every expectation! Just wow. So ridiculously easy too! Seriously friends try it! Maximum flavor and nutrient value.

Serves 4-6
​

What You Need:
Dressing:
  • 6 tbsp extra-virgin olive oil 
  • 2 tbsp Apple cider vinegar 
  • 2 tsp pure maple syrup or raw honey
  • 1 small clove garlic minced
  • 1/2 tsp Dijon mustard 
  • Large pinch of sea salt
  • Ground black pepper to taste


Salad:
  • 8 cups baby spinach leaves
  • 2 cups finely chopped red cabbage
  • 1 1/2 cups quinoa & wild rice mix (or quinoa or brown rice on its own) cooked as per packet instructions 
  • 1 cup blueberries 
  • 1 cup sprouts of your choice 
  • 1/4 cup chopped unsalted Brazil nuts
  • 1 can BPA Free can of wild salmon, preferably without bones
  • 1 large avocado, peeled, pitted and cubed


What to Do:
  1. Prepare dressing: In a medium bowl or jar with lid, whisk or shake together all dressing ingredients.
  2. Combine all salad ingredients in a large bowl and toss to coat with the dressing.
