Rocket pesto

Rocket pesto. You little beauty. I must admit when it comes to pesto i literally chuck in whatever greens are in season or in my fridge, realising you could make pesto with pretty much anything green was like a hallelujah moment for me! 


And with rocket on its way in this season. This recipe is a little winner. Simple, easy dinners that nourish and fill your taste buds with gladness. Yes please. Simplicity even the word is beautiful. And when life starts running away with me and things become complicated, or I’ve made it complicated. Life forces me, reminds me to refine things, take a step back, breathe and remember, keep it simple. It doesn't need to be complicated to be good. This dinner is that.


Tastes amazing, loaded with many vital phytochemicals, anti-oxidants, vitamins, and minerals and all their benefits! It sings health. And its SO simple. I love.

 What you Need:

  • 2 big handfuls of rocket, cleaned
  • 1 clove of garlic
  • small handful of walnuts, crushed
  • extra virgin olive oil, as needed
  • lemon juice of half - 1 full lemon depending on taste preference
  • small handful parmesan cheese, grated
  • salt & pepper to taste

What to Do:

  1. Have a play with the amount of ingredients based on your likes & the strength of the garlic, rocket, etc. 
  2. In a pestle and mortar or a processor start off with your rocket and a drizzle of oil to get it working. Once moving add in garlic & continue to grind. Now add in your nuts, lemon juice and a bit of salt & pepper & give it one more grind or pulse. At this point abandon the mortal & pestle or the machine & dump the mixture into a bowl. 
  3. Add a small handful of cheese and while continuously mixing add in the olive oil until you achieve your desired consistency.
  4. Tweak to personal taste preferences, with salt, lemon, garlic. Store in the fridge.


Delicious tossed over some wholegrain pasta or even rubbed over toasty wholegrain bread, fish, chicken! Whatever takes your fancy.
