Peanut Satay Stir Fry

Midweek secret weapon. 

Super quick, and rather wholesome and tasty!! This little Satay Peanut Stir Fry will fill all those Chinese restaurant feels, filled with only the good stuff, it's hard not to like!

Swap out for your choice of protein – beef, chicken, pork, prawns/shrimp or tofu! Serve as is, on some brown rice or quinoa and enjoy!

Serves 2-3


What You Need:
  • 1 x broccoli, chopped into bite-sized pieces
  • 1 eggplant, chopped into bite-sized pieces
  • 2 x courgettes, chopped into bite-sized pieces
  • 2 handfuls of green beans
  • 2 x chicken breasts, sliced
Sauce:
  • 1/2 cup smooth peanut butter (or use any nut butter e.g. almond butter)
  • 2 Tbsp tamari sauce (or soy sauce)
  • 1 tsp grated ginger
  • 2 x garlic cloves, crushed
  • 1 tsp honey
  • Juice of 1 lime
  • Juice of 1 orange
  • Pinch of chili - to taste
(If you like your stir fry to be more on the saucy and moist side, add a little bit more of the above sauce ingredients when making to allow for extra)


What to Do:
  1. Make the sauce by mixing all the ingredients together in a bowl or jar, Set aside. 
  2. Heat a tsp of coconut oil in a large pan an cook the chicken, set aside.
  3. Add extra oil to the pan and cook the vegetables. 
  4. Add back to the pan the cooked chicken together with the sauce and stir until hot. 
  5. Serve with brown rice or quinoa as an option.
