Peanut butter, chocolate cookies

Made these for our family trip and they have been an absolute winner!

If you have yourself a sweet tooth, these are the ticket! Personally doubled up the recipe for a sneaky seconds.

Its like crumbly chocolate, peanut buttery goodness. Make these for some healthy treating!!

Serves 5


What You Need:
  • 1/2 tsp chia seeds
  • 30g butter, at room temperature 
  • 2 tbsp coconut sugar
  • 11/2 tbsp unsweetened natural peanut butter
  • 1/3 cup wholemeal flour
  • 1/2 tsp baking powder
  • 3 tsp cocoa or cocoa powder 


What to Do:
  1. Soak the chia seeds in 1tsp water for 10 minutes so they plump up.
  2. Cream the butter and coconut sugar with an electric beater. Add the peanut butter and chia seeds and mix them in, then add the flour, baking powder and mix until well combined and a dough forms.
  3. Roll the dough into a log and wrap tight in a non stick wrap (plastic wrap) and place in the fridge to firm up for 20-30 minutes.
  4. Preheat the oven to 180 degrees celsius, and line a baking tray with baking paper.
  5. Cut the cookie dough log into 5 even rounds and place them on the prepared baking tray, leave plenty space between each.
  6. Bake for 10-15 minutes or until golden. Cool on tray for a few minutes, then transfer the cookies to a wire rack to cool completely. Store in an airtight container for unto a week.
