One Pot Chicken wonder

A great one pan meal for midweek, loaded with vegetables and Greek flavours! And how can anything go wrong with feta cheese sprinkled over the top!!

​One pan wonders! Less cleaning, full wholesome flavour, double ups for lunch, its hard not to like!


Serves 4

​What You Need:
Marinated Chicken:
  • 500g chicken thighs , boneless skinless (or even pieces or breast),
  • 1 clove of garlic, minced
  • 1 tbsp dried oregano
  • 1 lemon - zest of the whole lemon and juice of HALF the lemon
  • 1 tbsp olive oil
  • sea salt and ground pepper
Sauce:
  • 2 tbsp olive oil
  • 1 clove of garlic , minced
  • 1 small onion , diced
  • 2 zucchinis , diced
  • 1 red bell pepper/capsicum , sliced
  • 1/2 tbsp dried oregano
  • 2 1/2 cups chicken broth
  • 400g canned crushed tomatoes
  • 2 tbsp tomato paste
  • 1 cup pearl barley
  • 1 punnet cherry tomatoes
  • sea salt and ground pepper
Garnish (optional)
  • crumbled feta cheese
  • fresh herbs


What to Do:
  1. Combine Marinated Chicken ingredients in a bowl and set aside for marinate for 20 minutes.
  2. Preheat oven to 180C.
  3. Heat 1 tsp olive oil in a large, deep skillet or dutch oven over high heat.
  4. Cook marinated chicken until lightly browned but still pink inside. Remove from skillet.
  5. Turn heat down to medium high.
  6. Add 1 tsp olive oil, garlic and onion. Saute for 1 minute, then add zucchini and peppers/capsicum. Cook for 2 minutes.
  7. Add oregano, chicken broth, canned tomato and tomato paste. Add salt and pepper to taste.
  8. Mix, then add pearl barley. Mix, then top with chicken.
  9. Bring to a simmer, scatter over cherry tomatoes then transfer to the oven.
  10. Bake for 15 to 20 minutes, until pearl barley (tender but still firm) and chicken is cooked through.
  11. Remove from oven, drizzle with juice of remaining 1/2 lemon. Garnish with feta and fresh herbs, if desired, then serve.
