Nutty Chocolate banana bites

In my effort to find, create and explore quick, easy, healthy treats, I came up with this little bite of deliciousness.  So in line with having your cake and eating it welcome Nutty chocolate banana bites! They're rich, squishy, indulgent! Definitely fill that sweet tooth gap! Guilt free loving! 


So much of my athletic career was about deprivation, cutting things out, jumping from diet to diet in the quest for a thinner, 'healthier' me. If I only knew what i know now. 

Its amazing to live the life of balance and variation, to have a good functioning body that feels great and a way of eating that includes food that makes me smile and jump around with happiness. 

What are your treats? What makes you smile?
What You Need:
  • 2 large bananas or 3 small 
Chocolate Ingredients:
  • ¼ cup of coconut oil, melted
  • ¼ cup of unsweetened peanut butter (or other nut butter such as almond butter)
  • 2 tbsp of 100% cocoa or cacao powder
  • ½ tsp of pure vanilla extract
  • 1/4 tsp sea salt
  • 1 tbsp of raw honey or pure maple syrup
  • 1/4 cup of chopped almonds


What to Do:
Night before
  1. Slice banana’s into little chunks and place in a freezer bag with a small gap between each other. Place in freezer.
  2. To make ‘chocolate’:
  • In medium bowl:
  • mix the melted coconut oil, peanut butter, cocao or cocoa powder, vanilla, sea salt, honey and almonds together in a bowl until combined.
  3.  Remove banana pieces from freezer, take out of bag. Individually dip each banana piece in the chocolate until completely covered, place on a baking tray prepared with greaseproof paper. When all covered and on tray, place fridge for 10 minute, allow chocolate to set and banana to defrost a little. Eat up and enjoy!
