Just for those Winter-Summer feels, tonight we got the BBQ going.
Ok its gas, so perhaps not the real deal, and we were wrapped up watching it but dinner was delicious and reminded of the Summer nights of BBQ-ing just passed.
Prep time 20 mins
Cooking Time 10-20 mins
What You Need:
What to Do:
1. Cook sweet potato in a medium saucepan of boling water for 3 mins, drain and cool
2. Thread sweet potato, chicken and shallots onto 8 wooden Skewers. Place Skewers on a tray and brush with maple syrup.
3. Heat a greased charge grill or barbecue over medium heat. Cook skewers 4-5 minutes each side or until chicken is cooked.
Serve with: Brown rice and any steamed green vegetables to give colour and variety to the dish.
