Lemon blueberry oat bread

Great little sweet treat packed with whole grains for a filling kinda feeling! Dairy and refined sugar free it makes for smiles all round! 

It's crumbly and messy and you'll love it!!


Servings roughly 10 slices


What You Need:
  • 2 cups wholemeal four 
  • 1 cup whole grain oats
  • 1/2 cup coconut sugar 
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • zest of 2 lemons
  • 1 cup of fresh or frozen blueberries 
  • 3/4 cup unsweetened almond milk (or regular if preferred)
  • 1/2 olive oil 
  • 2 eggs


What to Do:
  1. Preheat oven to 180 degrees C. Grease a loaf pan.
  2. Mix together, in a large bowl, flour, oats, coconut sugar, baking powder, baking soda, sea salt and lemon zest. Add blueberries and toss to coat.
  3. In a separate bowl stir together milk, oil, egg. Breaking eggs up with a fork.
  4. Gently fold wet ingredients into dry ingredients; until combined, don’t over work.
  5. Pour into prepared loaf pan. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 45 to 50 minutes.
  6. Let cool for 5 minutes before removing and placing on wire rack to cool completely.
