Kumara tornado’s

My love for Kumara - sweet potato continues to grow!

​The options are endless and this one is all kinds of healthy, tasty YUM!! Served with your favourite protein or as it stands!

Be sure to double up for lunch it’s that good!!

What You Need:
  • 2 medium sized orange kumara (sweet potato), washed
  • Olive oil 
  • 2 tbsp butter, melted
  • 3/4 cup parmesan cheese, finely grated
  • 1 tsp garlic powder
  • 1 tsp ground cumin 
  • 1 tsp paprika 
  • 1/2 tsp chilli flakes 
  • 2 long wooden skewer sticks


What to Do:
  1. Press oven to 180C. Prick kumara with a fork and place in the microwave for 2-3 minutes. Allow to cool slightly, oil sticks slightly and slide through whole kumara until out the other side. 
  2. In a spiral, cut the kumara from one end to the other. Once cut pull apart so spaced out on skewer stick. Lightly baste the kumara with melted butter until covered all round.
  3. Mix spices and finely grated parmesan in a medium bowl. Once combined sprinkle over kumara’s until completely covered.
  4. Place in the oven for 40-50 minute or until golden on top and soft through. 
  5. Enjoy. Serve with side salad and chicken or as it stands on its own.
