Honeyed winter salad

Satisfy your appetite with this tasty and rather healthy salad delight.

Fabulously simple recipe for all those busy mommas out there! Well, not just mums, any body who's busy and fancies something easy, satisfying and has a lot of love for butternut!!

PREP: 15 MINS
COOK: 25 MINS
EASY


Serves 4

What You Need:

  • 1 butternut squash, cut into thin wedges
  • 2 red onions, halved and cut into wedges
  • 4 parsnips, peeled and cut into thin wedges     
  • 1 1/2 tbsp olive oil
  • 1-2 tbsp clear honey
  • 1 tbsp sunflower seeds, optional
  • 225g bag baby leaf spinach 
dressing:
  • 1 1/2 tbsp extra virgin olive oil
  • 2 tbsp apple cider vinegar
  • 1 tsp Dijon mustard


What to Do:
  1. Heat oven to 180 degrees C. Put the vegetables into a large roasting tin, drizzle with olive oil and season to taste. Roast for 20 mins, turning once in a while until softened. Drizzle with the honey. Scatter the sunflower seeds over the top and return to the oven for a further 5 to 8 mins or until toasted.
  2. Put the spinach into a large bowl and tip in the roasted vegetables. 
  3. To make dressing, whisk the vinegar, mustard and extra virgin olive oil together, season to taste and toss into the salad until the spinach wilts slightly. Serve immediately.
