Honey chicken stir-fry

Easy - healthy - tasty, 3 words that massively appeal to this momma over here. 3 words I thought weren’t very possible, Oh how I was wrong! 👌


• honey chicken stir fry •

What You Need:
  • 2 tsp cornstarch
  • 1 tsp cold water
  • 3 tsp olive oil, divided
  • 2 medium sized boneless skinless chicken breasts, cut into 1-inch pieces
  • 1 garlic clove, minced
  • 3 tbsp honey
  • 2 tbsp reduced-sodium soy sauce
  • 1/8 tsp salt
  • 1/8 tsp ground black pepper pepper
  • 1 large carrot, peeled and chopped into small cubes
  • 1 broccoli, florets removed
  • 1 red capsicum, seeds removed and chopped into small cubes
  • healthy sized handful of green beans, chopped into inch lengthen pieces
  • Hot cooked brown rice


What to Do:
  1. Mix cornstarch and water until smooth. In a large nonstick pan, heat 2 teaspoons olive oil over medium-high heat; stir-fry chicken and garlic 1 minute. Add honey, soy sauce, salt and pepper; cook and stir until chicken is no longer pink, 2-3 minutes. Remove from pan.
  2. In same pan, stir-fry vegetable blend in remaining oil just until tender, 4-6 minutes. Return chicken to pan. Stir cornstarch mixture and add to pan; bring to a boil. Cook and stir until thickened, about 1 minute. Serve with rice. Yield: 4 servings.
