Gingerbread-spiced muesli

Good honest food. Its my favourite. This was a perfect, light and refreshing change up to my regular muesli recipe. 

Topped with Natural unsweetened yoghurt, blueberries and figs. 

Sweet homemade comforts. 💛

What You Need:
  • 2 cups wheat bran flakes (I also used quinoa and buckwheat, take a look at what you can find at your local store!)
  • 2 cups wholegrain oats
  • 1/3 cup pumpkin seeds
  • 1/3 cup walnuts 
  • 1 cup dried figs, chopped into quarters 
  • 1 cup raisins
  • 1 tsp mixed spice 
  • 1 tsp ground ginger
  • 1/4 cup olive oil
  • 2 tbsp maple syrup
To serve:
  • fresh milk of choice, natural or Greek unsweetened yoghurt, any extra berries or fresh fig if available 


What to Do:
  1. Preheat the oven to 150 degrees C
  2. Place bran flakes, wholegrain oats, pumpkin seeds, walnuts, mixed spice and ground ginger on a large oven tray. Mix thoroughly. Drizzle oil and maple syrup over mix and make sure evenly spread.
  3. Place in the oven for 20-30 minutes or until golden in colour.
  4. Mix though dried figs.
  5. Serve warm or cold with milk or yoghurt and extra toppings of choice.
