Frozen peanut butter berry yoghurt bites

Healthy living does not need be boring, if only I could rewind back and know this truth!

With a little thinking, a little effort there is a world where food is happiness, it's tasty, it fills you with laughter. It's great. 

These little gems, are perfect Summer treats, smooth, creamy and guilt free!  

Yields 8-10

What You Need:
  • 1 cup of natural unsweetened yoghurt
  • 1 tsp raw honey
  • 1/2 cup natural unsweetened peanut butter (or favourite alternate nut butter e.g. almond)
  • Berries of choice to top


What to Do:
  1. Place yoghurt in a medium bowl, add tsp of honey and mix until completely mixed through
  2. Line muffins tray with 8-10 muffin cases
  3. Spoon an ice-cream scoop measure of yoghurt mix into each muffin case, flatten gently with a spoon.
  4. Spoon 1 tsp measure (roughly) peanut butter into muffin cases on top of the yoghurt. Carefully flatten and cover the yoghurt layer completely.
  5. Place blueberries, raspberries or berries of choice on top, push gently into peanut butter.
  6. Place in freezer until solid.
