Easy Toss-and Bake Granola

Nothing beats a good granola muesli in the morning, cold milk, fresh fruit! It’s the one above all others for me. So after having a the horrific realization of just how much sugar some of the shop bought brands have, so began my hunt for healthy recipes (that still taste good!) this one is a little gem. Easy, tasty, my kind of yum!!

Yield 6 cups


What You Need:
  • 4 cups whole grain oats (not quick cooking) 
  • 1 cup sliced almonds 
  • 1/2 cup shredded coconut (preferably unsweetened) 
  • 1/4 cup unsalted pepitas (hulled pumpkin seeds) or shelled sunflower seeds 
  • 1/3 cup pure maple syrup
  • 1/4 cup olive oil 
  • 1/2 tsp kosher salt
  • 1 cup dried fruit (such as cherries, cranberries, raisins, or currants)


What to Do:
  1. Heat oven to 180°C. On a rimmed baking sheet, toss the oats, almonds, coconut, and pumpkins seeds with the maple syrup, oil, and salt.
  2. Bake, tossing once, until golden and crisp, 25 to 30 minutes.
  3. Whilst cooling mix through dried fruit to combine. Let cool.
