Chicken, roasted vegetable one pot wonder

You have got to love a little one pot wonder! Yeh?

​This bowl full of Autumn seasonal deliciousness is so simple and satisfying! It makes this momma’s heart sing! 💛
​

What You Need:
  • 4 to 5 free range chicken legs or drumsticks 
  • herb rub, fresh herbs or preferred seasoning for chicken
  • olive oil 
  • 1 small butternut, peeled and chopped into chunks
  • I small orange kumara, peeled and chopped into chunks
  • 1 red onion, peeled and cut into wedges
  • I red, yellow and green capsicum, de-seeded and sliced into thick strips
  • sea salt and ground pepper
  • roughly 1/2 cup plain unsweetened Greek yoghurt.
  • a handful of fresh coriander, chopped


What to Do:
  1. Turn oven onto 180 degrees Celsius 
  2. Season chicken with preferred seasoning, fresh herbs. Set aside
  3. Place butternut, kumara, onion and chicken in large oven tray. Small drizzle of olive oil, season with a sea salt and pepper. Mix thoroughly through so evenly spread. Place in the oven for 30 minutes.
  4. Remove from oven, add capsicums and mix through. Place back in the oven for a further 15 minutes.
  5. Remove from oven. Make sure chicken is cooked through. Serve with yoghurt and fresh coriander.
