Blueberry - nut cocoa bars

Looking for a treat? Keeping with those healthy vibes, this beauty is stacked full of yumminess, it’s hard to believe it’s refined sugar free! Who ever said healthy can’t taste good, lied to me. Give it a try, you won’t regret it!! 
Makes roughly 28-30 bars 


What You Need:
  • 1 cup of raw almonds
  • 1 cup of raw walnuts 
  • 2 cups of dates 
  • 1 tsp sea salt
  • 1/2 cup of water 
  • 1 1/2 cups puffed rice (preferably brown and naturally sweetened for refined sugar free)
  • 1 1/2 cup whole grain oats
  • 1/2 cup dried blueberries (or any dried fruit if can't find)
  • 1/2 tbsp ground cinnamon
For chocolate layer:
Chocolate Ingredients:
  • ¼ cup of coconut oil, melted
  • ¼ cup of unsweetened peanut butter (or other nut butter such as almond butter)
  • 2 tbsp of 100% cocao powder
  • ½ tsp of pure vanilla extract
  • 1/4 tsp sea salt
  • 1 tbsp of raw honey or pure maple syrup


What to Do:
  1. Preheat oven to 180C. Prepare a baking tray with greaseproof paper. Place both almonds and walnuts on tray and place in the oven for 8-10 minutes or until golden. Remove, allow to cool slightly then chop coarsely and put to side.
  2. Place dates, sea salt and water into a food processor and blend until smooth. Scrape out and place in a medium bowl.
  3. Add puffed rice, oats, blueberries and cinnamon to bowl. Mix together. Add roasted nuts to bowl and mix until completely combined.
  4. Place greaseproof paper on baking tray, add mixture to tray and flatten. Place in fridge for 40 minutes to set.
  5. In the meantime combine melted coconut oil, peanut butter, cocoa powder, vanilla extract, sea salt and honey or maple syrup in a small bowl and mix thoroughly until smooth.
  6. Remove tray from fridge, pour melted ‘chocolate’ mix onto bars and smooth over to cover surface. Place in freezer for 10-15 minutes to harden.
  7. Remove from freezer and cut bars into preferred size.
